Spanish Serrano Wrapped fish

When travelling to Spain, it can be a little shocking in some resorts, when you see the British pubs, bars and restaurants. Be sure to hunt down the traditional Spanish restaurants, & enjoy the local flavors and produce.
This recipe showcases a beautiful combination of Spanish flavor, is easy to make, & can be cooked in the airfryer! Choose fish within your budget. Monkfish is perfect but expensive. Cod or Basa will work well!

WINE NOTE: Albarino or Verdejo are bright refreshing wines that work well with both the fish and the ham!

40g Black olives, pitted
1 1/2 tsp Thyme leaves
2 Anchovy fillets , drained
1 Garlic clove,
4 pieces of white fish
8 Slices of serrano ham

Olive oil
Sea salt & fresh ground black pepper

Heat an oven to 400F / 200C or an air fryer to 350F / 180C

Place the olives, thyme, & anchovies into a small food processor and blitz.

Cut diagonal slashes into the fish, and fill with the olive mixture.

Wrap with serrano ham, securing with toothpicks / cocktail sticks.

Heat the oil in a cast iron skillet and brown the wrapped fish on both sides.

OVEN Place the skillet into the oven for 10-12 minutes until the fish is cooked

AIRFRYER transfer the wrapped fish to the airfryer for 8-10 minutes until the fish is cooked.

Season with the sea salt and black pepper and drizzle a little olive oil over to serve.
