Old Bay Air Fryer Chicken- healthy but with all the flavor

Fried chicken and waffles with gravy. Superior indulgence food!! I loved fried chicken in the States. I would often stop for a takeout in Hyannis, MA, on the way to get the boat back to Nantucket. I would out my car in line for the boat, then sit on the dockside eating fried chicken and enjoying the view. An even more joyous event, was when the Rotary restaurant on Nantucket became a fried chicken venue.

However, coming to England was a whole different fried chicken experience! Chicken that had oil pouring from it, I have literally watched it pour as people carefully tried to eat that stuff!!! The other appetite explosion factor was the smell of the stale oil omitted by fried chicken restaurants. So that’s how the perfect cooked at home fried chicken odyssey began! And after several delicious versions, we now have the Old Bay Seasoned chicken, cooking it in the air fryer, reducing all the oil, and faster cooking.

WINE NOTE: It’s ironic that the perfect wine for one of my go to comfort foods, happens to be my go to comfort wine, Burgundy style Chardonnay. So big full bodied oaky Chardonnay will balance and round the flavors of Old Bay.

8 Chicken pieces

1 cup all purpose flour

1/4 cup Old Bay Seasoning

1 egg

Splash of water

Blend the flour and seasoning in. Ziplock bag on a plate

Blend the egg and water together in a bowl

Dip the chicken pieces in the egg mixture and then the flour mixture. Repeat.

Warm air fryer to 400F / 200C

Cook chicken in air fryer for 20 minutes, then flip over and cook for 5-10 minutes until a meat thermometer registers 165F /74C

Serve with gravy and waffles or coleslaw and BBQ beans
