South Korea is a fun and vibrant place, which I visited s a few years before BTS or Blackpink were born!! Memories are of lights, large tv screens and anime, as well as incredibly stylish people.
Korean food is a genre of it’s own, very different to Chinese or Japanese. Fried Korean chicken is an absolute delight! It’s also easy to prepare and cooking it in the air fryer keeps it healthier, while maintaining flavor!
WINE NOTE: I experimented with a Greek orange wine, called Methymnaeos, with huge success!!
- 2.2lbs/1kg chicken legs or bone in chicken thighs
- 2 Tbsp sake
- 2 tsp minced ginger
- 1 tsp fine salt
- 1/2 tsp ground black pepper
- 1 cup corn starch
- 3 Tbsp tomato sauce / ketchup
- 2 Tbsp Gochujang chilli paste
- 1/4 cup honey
- 1/4 cup brown sugar
- 2 Tbsp soy sauce
- 2 Tbsp minced garlic
- 1 Tbsp sesame oil
- sesame seeds
- scallions finely chopped
Blend the sake,ginger,salt, pepper and cornstarch in a large pan, and coat the chicken.
Blend the next 6 ingredients in a bowl. Warm on the hob.
Warm air fryer to 400F / 200C
Cook chicken in air fryer for 20 minutes, then flip over and cook for 5-10 minutes until a meat thermometer registers 165F / 74C.
Rest chicken for 10 minutes.
Pour the warm sauce over the chicken and sprinkle with sesame seeds and chopped scallions
