Air Fryer Slap Ya Mama Fried Chicken

Air fryer Slap Ya Mama chicken. It can be oven-fried also!
I love fried chicken, and I like trying different flavors of fried chicken. I have tried Malaysian and New Orleans, but the Slap Ya Mama really ramps it up to a whole new level!
It’s made healthier by cooking it in the air fryer or putting it in the oven. The results are just as great, if not better, as it is crispier. (More tips at end of recipe)
This seasoning blend is a Cajun one from Louisiana, giving true southern flavor. Although it gives more flavor, I don’t think it’s hot. Just a gentle spice. You could throw in an extra tablespoon or 2 though!!

Fried chicken is a great excuse to pop the cork and pour the bubbly!!! Cremant, Champagne, or sparkling English wine such as Nyetimber (no affiliation), all pair well with chicken fried in oil, but are also great with air fryer chicken. However, I also like a Provence Rose with this spicier chicken, which is dry and crisp.


Pam Spray or Fry Light Spray
6 Chicken drumsticks
6 Chicken thighs or breasts
3 1/2 cups / 875ml Ice water
125ml Milk
1 Egg beaten
2 cups /280g All-purpose flour (plain flour)
2 Tbsp Slap Ya Mamma seasoning (scroll to end of recipe for spice blend recipe)

Preheat oven to 400F / 200C / 180 fan or heat the air fryer 350F / 180C
Coat a baking sheet with 3 oil sprays if oven cooking.
Put the chicken in a large bowl of ice water
blend milk and egg in a medium bowl.
Put all of the flour and spice blend in another bowl and blend with a small whisk.
Dip the chicken pieces in yoghurt and then into the bag and shake to coat. Repeat.
If oven baking; Place the coated chicken on the baking sheet and spray lightly with oil. Place in the lower half of the oven and bake for 1 hour, turning every 20 minutes.
If air frying, spray lightly and cook for 14 minutes, then turn (spray with oil if needed) and cook for a further 8 minutes.

Slap Ya Mama Air Fryer Chicken Blend

1 teaspoon chili powder
1 teaspoon ground oregano
1 teaspoon dried thyme
1 teaspoon ground white pepper
1 teaspoon whole black peppercorns
1 teaspoon hot red pepper flakes
2 tablespoons sweet paprika
1 1/2 tablespoon salt
2 tablespoons onion powder
2 tablespoons garlic powder
2 tablespoons cayenne pepper
1 bay leaf ground

Fried chicken can be made lighter by using skinless chicken pieces and lighter coating, such as fat-free milk or yogurt. Even if you are not watching your weight, it’s always good, of course, to go for the lighter option.

You can substitute 1 cup of flour for 1 cup breadcrumbs, if you prefer a breaded texture. Plain or Italian breadcrumbs will work.

The chicken can be served with all the regular sides, biscuits and gravy, corn on the cob, coleslaw, and Potato Salad (click for a wonderful classic recipe). Homemade fried chicken knocks the branded fried chicken out of the ballpark, for very little work. So much faster than going out to the drive-through and bringing it home!!!! Also, chicken restaurants don’t usually serve wine which is another reason to make your own, and sip while your air fry!

If you decide to make your spice blend super spicy, a wine pairing that will work is Albarino. This wine bursts with fruits that hold well against the heat and spice and if served ice cold, has a cooling effect on your mouth making the heat of the spice bearable!
