Tasty Korean grilled scallops area wonderful appetizer and easy to make!

My travels to South Korea make me totally cool with my students!! They love K-pop and are blown away that I have actually visited Korea!!! The fact that I know about the food there also, just gives me extra kudos!! It’s a wonderful slick modern culture, and the food is just an awesome highlight of life in South Korea. It is not as greasy as Chinese food, which tends to have more oil and a little saltier. The Tasty Korean grilled scallops highlight this wonderful food culture!
More seafood and fish dishes

WINE NOTE: Fino sherry is a popular option with Korean flavor such as this, but Pinot Gris is a an excellent wine option for the soy /rice vinegar / sesame flavor.

12 Large scallops halved horizontally
1 Red pepper diced into 1″ / 2.5 cm pieces
1 Green pepper diced into 1″ / 2.5cm pieces
2 Garlic cloves minced
1 Scallion (spring onion) finely chopped
2 Tbsp Soy sauce
1 Tbsp Rice vinegar
1 Tbsp Sesame oil
1 pinch of chili powder

4-5 Wooden skewers soaked in water for 15-20 minutes

Salad leaves & lemon wedges to serve

Thread the scallops and peppers onto skewers, alternating them.

Place the skewers in a shallow dish. Blend the rest of the ingredients and pour over the scallops. Leave for 30 minutes, turning occasionally.

Place the skewers on a hot griddle plate, brushing with the marinade, turning occasionally cooking for 5-7 minutes.

Serve over the salad leaves with the lemon wedges.
