Air Fryer / Oven Crispy Crab Fritters

Crispy chunks of seafood goodness

Crab is such a beautiful versatile seafood, that reminds me of the more Southern half of the USA. Wonderful memories of Florida crab shacks picking the meat out of claws with friends. Maryland crab cakes are always a wonderful lunch or supper, but the best crabcakes memory are the Clubcar crabcakes from the iconic Clubcar in Nantucket MA.
These little fritters are also an epic use of crab. They are an awesome appetizer or sharing dish and taste amazing. That they can be made in the air fryer cuts out all the oil.
These can also be made with sashimi or seafood sticks, if you are cooking on a tight budget like many are, but still want fun food.

WINE NOTE: As this is not oily, it does not require an overly acidic wine to cut through. Dry Riesling pairs well with crab and with the Old Bay Seasoning spices. Pinot Gris would also be a pleasant aromatic pairing.

Crispy Crab Fritters

1 lb /450g Fresh crab meat

1/2 cup Bread crumbs

1 Egg beaten

1 tbsp Mayonnaise

1 tsp Dijon mustard

1 tsp Worcestershire sauce

1 tbsp Fresh parsley finely chopped

Place the egg, mayonnaise, mustard, Worcestershire sauce, parsley, and Old Bay seasoning in a bowl and mix.

Add breadcrumbs and crab meat and mix by hand to avoid breaking up too many of the lumps. Shape into 24 balls and in an air heated to 375F / 190C and fry for around 10-15 minutes turning once. Alternatively, place in the oven on a baking tray and bake for around 15-20 minutes turning once. Serve with fresh made Ranch dressing.
