
I have spent a lot of time in kitchens around the world asking questions, especially in Italy and Greece. I love it when authentic cuisine is handed to me on a plate (literally!!!), and this is an authentic Italian dish from Napoli, from someone that I knew and I just had to cook it. In typical Italian style, it’s simple ingredients, but epic flavor!
WINE NOTE: Verdicchio worked beautifully with the tomato sauce and shrimp, creating a flavor as smooth as Rob Thomas!!
225g Black Rice (Scroll to end for buying option)
800g Cherry tomatoes
300g Shrimp deveined
1 Tbsp Olive oil
2 Garlic cloves whole
2 Tbsp chopped fresh flat leaf parsley
Sea salt to taste
Fresh ground black pepper to taste
Cook the rice according to package instructions.
Place the tomatoes in a skillet, add the olive oil, garlic cloves, parsley, salt and pepper and cook until the tomatoes have broken down and formed a sauce.
Place the shrimp into the skillet and cook until lightly pink.
Serve the shrimp over the rice.
