Chorizo and Butter Bean Stew, Fast, Minimal Cuisine

Life’s too short for boring food, but sometimes time’s too short for prepping, chopping herbs and reductions!!
This recipe is the answers for all prayers of fast food without resorting to awful ‘ready-meals’ from the supermarket. With just 4 ingredients, you can have this ready in a jiff and sit down to a Mediterranean flavour ecstasy!
If its just for 2, the leftovers can be frozen for a future fast supper or will make for a warming lunch.

WINE NOTE: Sangiovese is a fair match to wash down this hearty stew

4 servings

200g cooking chorizo
2 X 400g cans chopped tomatoes with herbs
2 X 400g cans butter beans- drained
1 jar green pesto

Slice the chorizo and saute in a non stick skillet for 5 minutes.

Pour in the tomatoes and butter beans and bring to a boil.

Simmer for 10 minutes then gently stir through the pesto.

Serve with a side salad and your favourite fresh bread!
