BBQ Wings With an Easy Fresh Barbecue Sauce

I remember when I was young, I couldn’t imagine staying home on a Saturday night! Now, I can’t imagine being out of my PJs away from the sofa! Our food of choice on a Saturday night, often includes some kind of chicken wings, usually Buffalo hot wings with blue cheese dressing, set on a small lazy Susan table that we can wheel up to the sofa.. An American addiction, these are often served by the bucket and are often served free during happy hour. Occasionally, we want a different style, but if we are going for BBQ, they have to be good and the only way you get good is if you make your own sauce. This recipe is one we tried and fell in love with straight away!!

WINE NOTE: As we have several appetisers of varying type on the table, it’s hard to pin down one wine, but I don’t want it to be acidic, as seafood generally isn’t the feature dish. I tend to go with a Burgundy style oaky Chardonnay that is well rounded and goes with chicken and the air fried vegetables and creamy dips.

  • 1 k chicken wings
  • BBQ sauce
  • 1 tbs veg oil
  • 250ml ketchup
  • 25ml White wine vinegar
  • 75ml soy sauce
  • 1 shallot, peeled and diced
  • 1 clove crushed garlic
  • 1 red chilli diced
  • 100g Soft Brown sugar
  • 100ml maple syrup

Pre- heat the oven to 220 degrees.

Place the chicken wings onto a large rectangular pan

Gently fry the shallot in oil then Mix all the remaining ingredients in a pan and gently warm through to dissolve the sugar, Spoon this over the wings and bake for 30 minutes.
