I can’t believe I haven’t already blogged this, as we have been making this for several years and the flavours are phenomenal. It is a wonderful dish for celebrations and winter dinner parties. Of course, it’s very easy too! I love easy, as anyone who knows me would know!! You have to return to the oven a couple times, but the first return is just to lower the temperature. I have made this in an Aga and it came out beautifully!
WINE NOTE: The all important wine pairing is an easy one, South African Chenin Blanc. The Huguenot Chenin Blanc is a favourite with creamy pineapple flavours.
