Working for a new wine company, I have been incredibly busy working late preparing for a new role!! One of the things I love when I have worked late, is walking through the door of my cottage to aromas of great slow cooked food waiting for me in the crock pot! A definite ‘honey I’m home’!
This recipe is certainly worth loading up the crock pot for with extra to freeze for more fast suppers later! This dish goes well with bread, rice or mash potato and a side salad with balsamic of course! The great thing is that it is relatively quick and easy to prepare!!!
WINE NOTE: Barbera is a lovely full bodied red (yes red with chicken!) This wine has wonderful flavours of cherries, minerals and herbs with soft tannins and some acidity to stand against the tomato based sauce!
1 tsp olive oil
sea salt & black pepper
1.6 kg chicken pieces
300ml white wine
1x 400g pack of chopped tomatoes
3 sprigs of rosemary
2 bay leaves
5 garlic cloves peeled
1 small dried red chili crumbled (or a good shake of cayenne pepper)
70g pitted green olives
- Heat oil in a large skillet and brown the chicken and place in crock pot
- Put wine, tomatoes, herbs, garlic and chili in skillet & bring to boil. Pour over the chicken.
- Cook chicken for 6-8 hours
- Stir in the olives
- Serve immediately
